Two Hours Well Spent
Pour a glass of red wine. Drink the glass of red wine. Pour another glass of red wine.
Wash three zucchinis and peel four carrots. Chop the zucchini into half-inch half-moons and the carrots into reasonable discs. Toss vegetables with generous olive oil, salt and black pepper (freshly ground, always freshly ground). Roast in a roasting pan at a roasting temperature (450F) for 30 minutes, tossing halfway through, yo.
Chop half a dozen garlic cloves into medium chunks. Finely chop a whole load of fresh parsley and basil. Combine and simmer over medium-low with 28 ounces of whole tomatoes and sauce, one third cup olive oil and a mess of salt and black pepper (fg,afg).
Mix a pound of ricotta cheese with two eggs, one half cup of grated parmesan, as much frozen chopped spinach as seems prudent, and, you guessed it, salt and black pepper (do you want me to say it?). Set aside. The sauce should be ready and the vegetables as well.
Grate a pound of mozzarella until you get to your fingers. Narrowly miss adding in your fingernails.
Lay down a bit of sauce and top with three lasagna rectangles. Make sure these are the magical genius lasagna that don't have to be cooked on the stove before baking (thank you, Beth). Spread third of the delicious fatty fat mixture (the ricotta) over noodles and then a quarter of the mozzarella. Grate some parm on for good measure and then spread third of roasted vegetables. Pour some more sauce down.
The noodles are coming again. Repeat. Repeat. Put last three noodles on and spread with sauce and complete with the remaining cheese. Realize you've been working so frantically that you forgot your glass of red wine. Drink glass of red wine.
Top masterpiece with foil and bake at baking temperature (450F) for baking time (30 minutes). During this period, pile dishes into dishwasher, yes, even the cutting board and sauce pot. Realize that you have not swept kitchen floor since before last time you cooked lasagna. Sweep.
Remove lasagna and extricate foil, making sure to not pull away any cheese. Pop your sweet baby back in for 15 minutes. Spend this period searching for new Washington State license that just arrived today and that you have already lost. Realize it is still stuck with that rubber cement stuff to the piece of paper lying under your desk.
Remove lasagna and allow to cool for 15 minutes, exerting all possible will to stifle hunger and lust.
Feast!

Anyways, I'm making the lasagna tonight because i have like 5 random cheeses that are about to expire in my fridge, plus a load of roasted veggies from a meeting i went to that they were giving away.
I'll let you know how it comes out.
I ran into Becca Lee at a fair where my youth were performing (check the amazing pics on our myspace - oh wait, you have to be a friend to see (cuz, you know, they're minors) - well, if you want to see, you can log-on as me - send me an e-mail and I'll tell you how.). Anyways, it was cool to see her, turned out that she had helped to tutor one of our youth leaders who got a full 4 year scholarship - pretty cool - it was crazy when i saw her cuz i was dealing with 14 dancers and accessories, etc., but if you talk to her, tell her i appreciated seeing her and good luck in JP.

This is the first official meal I'm going to cook in our new kitchen. With everything put away! (I don't think frozen pizza x3 counts or mac-n-cheese or a weird concoction of brussell sprouts & garlic & cherry tomatoes cooked in the microwave & poured over spinach to wilt it. That last one was pretty impressive considering you had to do the long jump over boxes between each step of the meal, but still, this counts as the first real one. Cheers!) Going to the store right now to get really good ricotta. Glad your eye is better. We should talk re. Thanksgiving - we can pick you up & you can stay over Wed night, or also, you can stay over Saturday night - we're having a little party with my girlfriends & SO's that night & you can come too - probably hot toddies!
